Quick Vegetable Sides: Roasted Asparagus Tips

If you are a mom, I bet your kids (or at least one) is resistant to vegetables. In fact, I've come to the conclusion that I MUST serve and present vegetables to my kids everyday - BUT I realize that they aren't always going to eat them! That's why I cook and rotate a list of my favorite quick vegetable sides that I don't mind making because I like them and they were fast. Roasted Asparagus Tips An Italian-American friend of mine taught me how to make this yummy veggie side. It's really easy and very mediterranean. 1. Wash and dry your asparagus. (I usually pick out very thin asparagus stalks because they are typically the sweetest.) 2. Cut off bottoms of asparagus, leaving the tip and some of the stalk. 3. Spread them out on a cookie sheet. 4. Drizzle olive oil on top. Roll them around on the cookie sheet to make sure olive oil spreads somewhat evenly on the tips. 5. Season with fresh ground black pepper and kosher salt or sea salt. 6. Roast asparagus tips in oven set at 400˚ 7. Roast until tips turn slightly darker green OR 8. If you like crispy (like french fries), roast until tips are slightly brown in color. ENJOY!
